Rich, dense, and deeply chocolatey. These fudgy brownies have a glossy crackly top and a soft, almost truffle-like center!

  • 170g dark_chocolate, Chopped
  • 120g butter
  • 150g sugar
  • 1tsp vanilla_extract
  • 65g all_purpose_flour
  • 25g cocoa_powder
  • 0.5tsp salt

Instructions

    Preheat the oven to 170°C. Line pan with baking paper.

    Melt butter and dark chocolate together, stir until it's smooth and glossy. Let it cool slightly (important so the eggs won't scramble).

    Whisk sugar into the chocolate mixture.

    Add eggs one by one, whisk well after each addition until the batter looks thicker and glossy.

    Mix in vanilla.

    Sift flour, cocoa powder, and salt together. Fold gently into batter with a spatula (don't over mix).

    Pour batter into prepared pan and smooth the top.

    Bake for 20-25 minutes until the edges are set and the center is soft.

    Let it cool completely before cutting, brownies firm up as they cool.

Tips

  • Use caster sugar or mix white + brown sugar
  • Don’t skip whisking eggs and sugar!
  • Slice with a hot knife, wipe between cuts for clean edges :)
