Palak Paneer

Fresh spinach curry with soft paneer cubes. A vegetarian delight.

- 500g spinach
- 250g paneer, cubed
- 1medium onion
- 1medium tomato
- 4cloves garlic
- 1inch ginger
- 2whole green_chili
- 1tsp cumin
- 0.5tsp garam_masala
- 2tbsp heavy_cream
- 3tbsp ghee
- 1tsp salt

Blanch spinach in boiling water for 2 minutes, then immediately transfer to ice water. Drain and blend to a smooth puree.

Lightly fry paneer cubes in ghee until golden. Set aside.

In the same pan, add cumin seeds. Once they splutter, add onion and sauté until translucent.

Add ginger, garlic, and green chilies. Cook for 1 minute, then add chopped tomato.

Add spinach puree, salt, and garam masala. Simmer for 5 minutes.

Add fried paneer cubes and cream. Cook for 3 more minutes and serve hot.
Tips
- Blanching and ice bath keeps the spinach bright green instead of dull olive.
- Don't overcook the spinach puree or it will lose its fresh flavor.
