Ingredients

Servings
4
  • 250g ground_beef
  • 250g ground_pork
  • 1small onion, finely grated
  • 50g breadcrumbs
  • 1large egg
  • 300ml heavy_cream, divided
  • 200ml beef_stock
  • 50g butter
  • 2tbsp all_purpose_flour
  • 0.5tsp allspice
  • ¼tsp nutmeg
  • 100g lingonberry, for serving
  • 1tsp salt

Equipment Needed

  • cast_iron_skillet

Instructions

  1. 1

Soak breadcrumbs in 50ml cream for 5 minutes.

  2. 2

Mix ground meats with soaked breadcrumbs, grated onion, egg, allspice, nutmeg, and salt.

  3. 3

Roll mixture into small balls (about 2.5cm). Refrigerate for 30 minutes.

  4. 4

Brown meatballs in batches in butter. Set aside when golden all over.

  5. 5

In the same pan, add flour and stir for 1 minute. Gradually whisk in stock and remaining cream.

  6. 6

Simmer sauce until thickened. Return meatballs to sauce and cook 10 minutes.

  7. 7

Serve with mashed potatoes and lingonberry jam.

Tips

  • Grating the onion instead of chopping gives a smoother texture to the meatballs.
  • Chilling the meatballs before frying helps them hold their shape.
  • If you can't find lingonberry, cranberry sauce is a decent substitute.
